Sea salt and thyme chocolate chip cookies

For the past few years, I have really been enjoying the salty sweet combo. To me, it’s the perfect combination.
These cookies fit perfectly into that category. Plus, they have the added flavor of the thyme.

To make them, I mixed together the flour, baking soda, salt and thyme. I didn’t measure the thyme but just added until I felt it looked like enough.

Next, I combined the butter and sugar in my mixer. Then I added the vanilla and eggs. Finally, the flour mixture is added in three batches.

The last ingredient is the chocolate. I used chocolate chips instead of chunks.

Once the chocolate is folded in, the dough is ready to be scooped out onto the pan.

Before the cookies go into the oven, they are sprinkled with coarse sea salt.

11 minutes in the oven and you have some tasty cookies!

Mexican Quinoa

I love quinoa. Seriously. I would eat it every day if it wasn’t so expensive.
Right before cinco de mayo, I was searching for dishes to make. I found this recipe for Mexican quinoa and added it to my list of things to try. Although, I didn’t end up making it for cinco de mayo.

This week I finally got around to it. And I’m sure glad I did. It was a hit! Even with my daughter, although she would really only eat the quinoa part (with an occasional hidden corn or diced tomato).

The recipe is really quite simple.

First, I put the garlic and the (homegrown) jalapeƱo in the pan.
The next step is basically adding every ingredient in.

I brought the dish to a boil, covered and reduced the heat.
20 minutes later, I added the avocado, lime juice and cilantro.

Once everything was all mixed together, it was ready to eat.

Matt added a cooked egg on top of his because I was worried it wouldn’t be filling enough.
I was full from my serving. Although, later on I noticed I was a bit hungry.

I’m very happy how this turned out. It was so easy to make, nutritious and delicious! I highly recommend this dish!

Chocolate banana loaf

It’s not often that I bake anymore. So I decided to make a banana loaf with some of the bananas in my freezer. A few months ago I had tried a chocolate banana loaf recipe from Pinterest and it was a pretty big hit in our house. I decided to make it again.
You can find the recipe here
This is another simple recipe. You’ll notice that’s a common theme with me…
I put the dry ingredients in one bowl, and the liquid ingredients into another.

Then I mixed them together and had my helper step in to add the chocolate chips.

One they were mixed together, I dumped it all into a greased load pan and popped it into the oven.

After an hour in the oven, this is what the loaf looked like

When this was in the oven, I remembered that last time I made it, the loaf was a bit dry. I was annoyed that I was only just remembering since it was too late to add extra moisture. Of course, the result was the same. A delicious chocolate banana loaf, that was slightly dry. Next time I make this, because there will be a next time, I need to remember to make some adjustments!

A really tasty way to enjoy this is by putting a slice into your toaster and putting a bit of butter or margarine on top. That’s what we do in our house, and the loaf is gone before you know it!
