Red pepper and basil frittata

This recipe has been in my “to make” pile for about a month. Finally, it fit into my meal plan this week and didn’t get bumped. I found the recipe from eat yourself skinny, and after making this dish, I plan on checking out her blog further.

As per usual, the recipe is easy. If you can’t tell, I really like easy and quick meals!

First off, chop up your red pepper and basil.


Next, crack the eggs into a dish. The recipe calls for 6.


All that’s left to do is put all the ingredients into a bowl and mix them up. The original recipe calls for a spring loaded pan, but I don’t have one, so I used a 9 inch glass pie dish, lined with parchment paper and greased.


After 25 minutes in the oven, the frittata is ready.


We had this with green beans and steamed broccoli. It was a hit with both my husband and daughter. Although Chloe did pull out every red pepper.

It wasn’t a heavy meal, but it was satisfying. And healthy.
