Coconut chickpea curry

After we came home from vacation, we only had a few groceries in our fridge. I decided to make a chickpea curry I had found on Pinterest and had made before.
I did not have all the vegetables so I improvised.

I cut up a red bell pepper and half an onion. I added frozen peas after adding the garlic.

Once the veggies were cooked, the rest of the ingredients were added.


Once everything was warm, the dish was ready to eat.

I made basmati rice to go along with this dish. I wish I had cilantro though.

This dish was just ok. Matt wasn’t a big fan, but Chloe ate the rice with some sauce which is a win in itself.
What I’ve been finding with quick curry dishes is that they really need some more time to cook or sit and develop the flavors. If I make this again, I might add some other spices to the dish.
